L. reuteri bleu cheese salad dressing

He loves to roast meats over a barbecue and post his wonderful creations on the page. He and his family have got to be among the healthiest and best fed people in Southern California.

He recently posted the photo above of a meal he created topped with his creation, L. reuteri bleu cheese salad dressing, adding:

“Who would have ever thought such simple foods would exponentially change the quality of our lives? My word, we are so very lucky.”

So here is what Keoni did to create this wonderful salad dressing for this dish of meat and vegetables:

L. reuteri bleu cheese salad dressing

Makes 4 cups

1 cup Lactobacillus reuteri yogurt
2 cups mayonnaise
2-3 cloves garlic, minced
2 tablespoons red wine or other vinegar
3/4-1 cup of bleu cheese. (It’s best to buy a chunk and crumble it with a fork so there are more small pieces along with the chunks. That way, it will absorb easier into the mixture and become thicker as the cultures grow.)

Mix all ingredients together in a quart jar. I like to make it the day before. That way, all the flavors blend together and it becomes much thicker. You may even have to serve it with by adding a bit of heavy cream.
